The rice in Edomae sushi was also unique. It was mixed with vinegar, which added a tangy flavor and acted as a preservative. Fast forward to today, and Chiyoda Sushi continues to honor the tradition of Edomae sushi. It remains a beloved spot for locals, foreign residents, and tourists alike, standing out as a modern-day equivalent of Edo's fast food.
